
Roast vegetable and meatball pizza
Try this pizza loaded with luscious roasted vegetables, it’s so good.

Method:
- Preheat oven to 225°C
- Place courgettes, eggplant and capsicum in a large roasting dish and mix with oil
- Roast for approximately 20 minutes or until softened and beginning to brown, then remove from oven
- Place pizza bases on baking trays and evenly spread tomato puree over the top
- Spread roasted vegetables over the tomato puree
- Place balls of mince on top of the vegetables
- Sprinkle cheese over the top
- Bake for approximately 15 minutes or until golden brown
- Remove from oven and serve
Tips:
- For something a little fancier, you can make the meatballs out of this mixture: Grilled beef kofta
- Any roast vegetables will work, use whatever you have available
- If you don’t have the time to roast vegetables you can top the pizzas with finely chopped raw capsicum, courgette, mushroom or red onion.
- You can also make your own pizza bases or use pita bread
