Roasted Cajun chicken and vegetables

This one-pan chicken and vegetable dish is a quick and easy meal. With bold hearty flavours and just a little added spice, it’s sure to put a spring in your step.

Method

  1. Pre-heat oven to 225°C
  2. Place chicken, onion, capsicum, courgette and broccoli on a large roasting tray
  3. Drizzle with oil and sprinkle with spice mix then mix to coat evenly
  4. Roast for approximately 30 minutes, mixing once or twice during that time
  5. Remove from oven and mix through lemon juice
  6. Transfer to a serving dish and top with rocket leaves and feta

Tips

  • Choose spice mixtures with little or no salt added, or make your own using- paprika, cumin, chilli, dried oregano, onion powder and garlic powder (or any blend you like)
