
Roasted Cajun chicken and vegetables
This one-pan chicken and vegetable dish is a quick and easy meal. With bold hearty flavours and just a little added spice, it’s sure to put a spring in your step.

Method
- Pre-heat oven to 225°C
- Place chicken, onion, capsicum, courgette and broccoli on a large roasting tray
- Drizzle with oil and sprinkle with spice mix then mix to coat evenly
- Roast for approximately 30 minutes, mixing once or twice during that time
- Remove from oven and mix through lemon juice
- Transfer to a serving dish and top with rocket leaves and feta

- Choose spice mixtures with little or no salt added, or make your own using- paprika, cumin, chilli, dried oregano, onion powder and garlic powder (or any blend you like)
