
Stewed fruit, custard and crumble parfait
Impress your guests with this elegant but easy dessert. Perfect for a dinner party where everything can be made ahead of time.

Method
Stewed fruit
- Place all ingredients in a pot with a lid and cook over a medium heat.
- Stir occasionally and continue to cook for approximately 10 minutes or until apple and rhubarb are soft.
- Remove from the heat and allow to cool.
Crumble
- Pre-heat oven to 175°C.
- Beat egg and oil.
- Mix dry ingredients together then mix through egg mixture.
- Spread mixture evenly over a large roasting tray.
- Bake for approximately 30 minutes, mixing often and breaking up any large lumps, until crunchy and golden brown.
- Remove from oven and allow to cool.
Custard
- Mix all ingredients until there are no lumps.
- Heat gradually over a low to medium heat stirring constantly.
- Continue to cook while stirring until the custard has boiled and thickened.
- Remove from heat and allow to cool.
To serve
- Place fruit in a glass.
- Pour custard over the top.
- Sprinkle crumble over the top then serve.
