Summer berry trifle

Despite looking complicated, this recipe is actually very easy and achievable. It’s also packed full of beautiful fresh flavours. We think you’ll love it.

Method

Base layer

  1. Heat oven to 160°C
  2. Beat together all of the ingredients until well combined
  3. Pour into a greased slice tray lined with baking paper to a depth of approximately 2cm
  4. Bake slice for approximately 30 minutes or until lightly browned and springy to the touch
  5. Remove from oven and allow to cool in the tray

Berry layer

  1. Place berries in a small pot and cover with a lid
  2. Bring to a gentle simmer and cook until soft
  3. Mash the fruit with a potato masher to create a slightly lumpy pulp
  4. Remove from heat and stir through chia seeds
  5. Allow to cool

Custard layer

  1. Mix all ingredients until there are no lumps
  2. Heat gradually over a low to medium heat stirring constantly
  3. Continue to cook while stirring until the custard has boiled and thickened
  4. Remove from heat and allow to cool

Assembly

  1. Break up base layer into small pieces and press into the bottom of serving bowl
  2. Cover base layer with berry layer
  3. Spread drained pears over berries
  4. Pour custard over pears
  5. Refrigerate until custard has set slightly
  6. Spread yoghurt over custard
  7. Place chopped berries on top of yoghurt
  8. Refrigerate until ready to serve

Tips

The base layer and berry layer can be made up to two days in advance and refrigerated until ready to assemble.

The trifle can be assembled one day prior to serving.

Canned pears can be substituted for any other canned fruit, use what you prefer.

If fresh berries are not available, use any chopped fruit on top.
