
Upside down orange cakes
These tasty morsels have no added sugar and are a great dessert for any occasion.

Method:
- Preheat oven to 180°C
- Chop 2 oranges with skin on into small pieces and place into food processor with eggs, oil, almonds and baking soda
- Blend until smooth
- Peel the other orange and slice into 12 slices
- Place a slice of orange into each cup of a greased 12 medium cup muffin tray
- Spoon mixture on top of orange slices
- Bake for approximately 20 minutes or until springy to the touch and beginning to brown
- Turn out onto a wire rack to cool
- Keep refrigerated or serve warm

- These are great served with yoghurt
