Method
- Boil a jug of water and pour over vermicelli in a bowl. Leave to soak for around 5 minutes, until soft. Drain, then snip with scissors into smaller strands.
- Cook onion for about 3 minutes until softened. Add other vegetables, garlic, coconut, and red curry paste. Cook until tender. Add vermicelli.
- Stir through lime juice and serve.
Tip
Add cooked prawns or shredded chicken to turn it into a light meal.
